Vance’s love of local and organic ingredients melds beautifully with Château Morrisette’s historic use of regional foods in support of local food artisans and organic farmers. He likes to infuse fresh ingredients with herbs, oils, juices and a surprise or two. Intrigued by a gamut of influences from Asian to classic, Vance is attentive to every detail. The opportunity to pair his signature dishes with award-winning wines made on site is an exciting adventure for all of us.

Vance previously apprenticed at the Hotel Hershey, Hershey, PA, under Austrian certified Executive Chef Heinz Hautle, has completed externships at resorts in Boca Raton, FL, and Scottsdale, AZ, and was formerly an executive chef at First Street Grille, Atlantic Beach, FL. In 2001, the Jacksonville Jaguars chose Vance to represent them at the NFL Taste of the Super Bowl.
